- 3/4 cup buttermilk
- 1 large egg
- 2 tablespoons cajun seasoning (divided)
- 1 cup flour
- 2 tablespoons cornstarch
- 1 teaspoon baking powder
- 4 cups vegetable or peanut oil
- 4 buns (lightly toasted)
- 6 tablespoons jalapeno honey
- 4 tablespoons mayonnaise
Instructions
- Marinate the chicken in a mixture of buttermilk, egg, and 1 tablespoon of cajun seasoning for at least 1 hour, preferably overnight.
- Prepare the dredging mixture by combining the flour, remaining cajun seasoning, cornstarch, and baking powder in a separate bowl.
- Dredge the marinated chicken in the flour mixture and place it on a wire rack to let excess drop off.
- Heat the oil in a large pot or deep skillet to 350°F (180°C).
- Fry the chicken pieces for about 4-5 minutes on each side until golden brown and cooked through, then drain on a wire rack.
- Assemble the sandwiches with fried chicken on buns, topped with jalapeno honey and mayonnaise, and serve immediately.
