Description

Delicious S’mores Cookie Bars blend the classic campfire treat with a chewy cookie, featuring chocolate, marshmallows, and a graham cracker crust.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed light or dark brown sugar
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup graham cracker crumbs
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 heaping cup marshmallow crème

Instructions

  1. Preheat the oven to 350°F (177°C) and line an 8-inch square baking pan with parchment paper.
  2. Cream together the butter and brown sugar in a mixing bowl for 2-3 minutes until smooth.
  3. Blend in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk flour, graham cracker crumbs, baking powder, and salt; gradually mix into the wet ingredients.
  5. Fold in chocolate chips evenly.
  6. Press half of the cookie dough into the prepared pan, spread marshmallow crème, and drop spoonfuls of the remaining dough on top.
  7. Bake for 25-30 minutes until edges are lightly browned and the center is set.
  8. Allow bars to cool completely before lifting out and cutting into squares.
