Instructions

  1. Prepare the avocado mixture: Cut the ripe avocados in half and remove the pits. Scoop the flesh into a mixing bowl, adding lime juice, salt, and pepper. Using a fork, gently smash the avocados until you reach your desired texture.
  2. Mix the toppings: In a separate bowl, combine the diced cherry tomatoes, finely chopped red onion, and fresh cilantro. Drizzle in the olive oil and season with salt and pepper. Toss gently to combine.
  3. Toast the bread: Preheat your oven to 375°F (190°C). Place the bread slices on a baking sheet, drizzle with olive oil, and toast for about 10 minutes until golden brown. Rub the toasted side with the garlic clove afterward.
  4. Assemble the bruschetta: Spread the smashed avocado mixture over each piece of toasted bread, then top with the tomato and onion mixture.
