- 1 1/2 lbs sirloin or ribeye steak, cubed
- 4 large russet potatoes, thinly sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 cups sharp cheddar cheese, shredded
- 1 cup heavy cream
- 1 cup beef broth
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- Fresh parsley or green onions (optional)
Instructions
- Wash, peel, and thinly slice the russet potatoes and cube the steak into bite-sized pieces. Season with smoked paprika, salt, and black pepper.
- Melt butter in a skillet over medium heat. Sear the seasoned steak on all sides until golden brown.
- In the slow cooker, layer half of the sliced potatoes, half of the cheddar cheese, and half of the diced steak. Add diced onions and minced garlic, then repeat the layers.
- Whisk together heavy cream and beef broth, then pour over the layered ingredients.
- Cover and slow cook on low for 4-6 hours until potatoes are tender.
- Add remaining cheddar cheese during the last 30 minutes of cooking.
- Garnish with fresh parsley or green onions before serving.
