Ingredients

  • 1 1/2 lbs sirloin or ribeye steak, cubed
  • 4 large russet potatoes, thinly sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 1 cup beef broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • Fresh parsley or green onions (optional)

Instructions

  1. Wash, peel, and thinly slice the russet potatoes and cube the steak into bite-sized pieces. Season with smoked paprika, salt, and black pepper.
  2. Melt butter in a skillet over medium heat. Sear the seasoned steak on all sides until golden brown.
  3. In the slow cooker, layer half of the sliced potatoes, half of the cheddar cheese, and half of the diced steak. Add diced onions and minced garlic, then repeat the layers.
  4. Whisk together heavy cream and beef broth, then pour over the layered ingredients.
  5. Cover and slow cook on low for 4-6 hours until potatoes are tender.
  6. Add remaining cheddar cheese during the last 30 minutes of cooking.
  7. Garnish with fresh parsley or green onions before serving.
