Description

  • 1/2 teaspoon coriander seeds, toasted and ground
  • 2 cloves garlic, minced
  • 2 serrano green chiles, stemmed
  • 1 bunch fresh cilantro, leaves and stems
  • Kosher salt, to taste
  • 1/2 cup vegetable oil
  • 2 pounds sardines, cleaned, scaled, and gutted

Instructions

  1. Begin by preparing the vibrant green sauce. In a food processor, blend together the lemon juice, ground cumin, ground coriander, minced garlic, stemmed serrano green chiles, cilantro, and a pinch of kosher salt. Pulse until coarse, then gradually incorporate the vegetable oil until smooth. Adjust seasoning with salt if desired.
  2. Skewer the sardines, ensuring not to pierce the flesh deeply. Lightly season with kosher salt. Preheat a grill or cast iron grill pan over medium-high heat.
  3. Grill the sardines for about two minutes on each side, watching for grill marks and a well-charred exterior. Remove from heat, serve hot drizzled with the green sauce and accompanied by lemon wedges.

Notes

For extra flavor, marinate the sardines in the green sauce for a couple of hours before grilling. Experiment with additional spices or herbs to personalize your dish.
