- 2 serrano green chiles, stemmed
- 1 bunch fresh cilantro, leaves and stems

- 1/2 cup vegetable oil
- 2 pounds sardines, cleaned, scaled, and gutted
Instructions
- Begin by preparing the vibrant green sauce. In a food processor, blend together the lemon juice, ground cumin, ground coriander, minced garlic, stemmed serrano green chiles, cilantro, and a pinch of kosher salt. Pulse until coarse, then gradually incorporate the vegetable oil until smooth. Adjust seasoning with salt if desired.
- Skewer the sardines, ensuring not to pierce the flesh deeply. Lightly season with kosher salt. Preheat a grill or cast iron grill pan over medium-high heat.
- Grill the sardines for about two minutes on each side, watching for grill marks and a well-charred exterior. Remove from heat, serve hot drizzled with the green sauce and accompanied by lemon wedges.
Notes
For extra flavor, marinate the sardines in the green sauce for a couple of hours before grilling. Experiment with additional spices or herbs to personalize your dish.
