Ingredients

- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 tsp vanilla extract
- 2 cups all-purpose flour, sifted
- 1/4 tsp salt
- 3/4 cup raspberry jam
- 2 tbsp fresh lemon juice
- Powdered sugar for dusting
Instructions
- Cream the softened butter and granulated sugar together until light and fluffy.
- Incorporate the sifted flour and salt into the butter mixture until a soft dough forms.
- Shape the dough into a disk, wrap in plastic wrap, and chill for at least 35 minutes.
- Warm the raspberry jam and lemon juice in a saucepan until smooth.
- Preheat your oven to 350°F (175°C).
- Roll out the chilled dough to 1/4 inch thick and cut shapes to fit your tart pans.
- Press the dough into tart pans and prick the bottoms with a fork.
- Spoon 1-2 teaspoons of the warm raspberry filling into each tart shell.
- Bake the tarts for 15-20 minutes or until edges are golden brown.
- Allow to cool completely before removing and dust with powdered sugar.
Notes
For variety, try using different fruit preserves or adding almond extract for enhanced flavor.
