Description

Delightful tarts made with rich shortbread and vibrant raspberry jam, perfect for tea parties or any occasion.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 2 cups all-purpose flour, sifted
  • 1/4 tsp salt
  • 3/4 cup raspberry jam
  • 2 tbsp fresh lemon juice
  • Powdered sugar for dusting

Instructions

  1. Cream the softened butter and granulated sugar together until light and fluffy.
  2. Incorporate the sifted flour and salt into the butter mixture until a soft dough forms.
  3. Shape the dough into a disk, wrap in plastic wrap, and chill for at least 35 minutes.
  4. Warm the raspberry jam and lemon juice in a saucepan until smooth.
  5. Preheat your oven to 350°F (175°C).
  6. Roll out the chilled dough to 1/4 inch thick and cut shapes to fit your tart pans.
  7. Press the dough into tart pans and prick the bottoms with a fork.
  8. Spoon 1-2 teaspoons of the warm raspberry filling into each tart shell.
  9. Bake the tarts for 15-20 minutes or until edges are golden brown.
  10. Allow to cool completely before removing and dust with powdered sugar.

Notes

For variety, try using different fruit preserves or adding almond extract for enhanced flavor.
