Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 large onion, thinly sliced
  • 3 cups cooked rice (cold)
  • 3 cloves garlic, minced
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Begin by heating the oil in a large skillet or wok over medium-high heat. Sear the thinly sliced beef sirloin until browned, which should take 3-4 minutes. Once cooked, remove the beef and set it aside on a plate.
  2. In the same skillet, add the sliced onions and sauté them until they become soft and golden, approximately 5 minutes.
  3. As the onions soften, add in the minced garlic. Stir well until fragrant, typically around 30 seconds.
  4. Push the fragrant onion and garlic mixture to one side of the pan. Pour the beaten eggs into the pan, scrambling them gently until they are just set.
  5. Next, add the cold rice to the skillet. Use a spatula or wooden spoon to break up any clumps, mixing it with the eggs, onions, and garlic.
  6. Stir in the soy sauce and oyster sauce, mixing until everything is evenly coated.
  7. Finally, return the cooked beef to the pan, tossing everything together. Season with salt and pepper to taste. Garnish with chopped green onions.

Notes

For best results, use cold, day-old rice. Feel free to add your favorite vegetables for extra flavor and nutrition.
