Description

A delightful homemade ice cream with a creamy texture and the rich flavor of rum-soaked raisins, perfect for summer gatherings.


Ingredients

Scale
  • 1/2 cup raisins
  • 1/4 cup Caribbean rum
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup sugar
  • 1/4 teaspoon kosher salt
  • 5 large egg yolks
  • 2 tablespoons Caribbean rum
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Combine the raisins and rum in a small bowl. Cover and let soak for at least 2 hours or overnight.
  2. Heat the heavy cream, whole milk, sugar, and salt in a saucepan until warm.
  3. Whisk the egg yolks until smooth, then temper with the warm cream mixture.
  4. Gradually add the egg mixture back into the saucepan and stir until thickened, about 5–7 minutes.
  5. Remove from heat and stir in the rum and nutmeg. Cool and refrigerate for at least 4 hours.
  6. Churn in an ice cream maker according to instructions, adding the soaked raisins during the last 5 minutes.
  7. Transfer to an airtight container and freeze for at least 4 hours before serving.

Notes

For best results, soak the raisins overnight and monitor the churning process to avoid over-churning.
