A delightful homemade ice cream with a creamy texture and the rich flavor of rum-soaked raisins, perfect for summer gatherings.

- 1/2 cup raisins
- 1/4 cup Caribbean rum
- 2 cups heavy cream
- 1 cup whole milk
- 1/2 cup sugar
- 1/4 teaspoon kosher salt
- 5 large egg yolks
- 2 tablespoons Caribbean rum
- 1/4 teaspoon ground nutmeg
Instructions
- Combine the raisins and rum in a small bowl. Cover and let soak for at least 2 hours or overnight.
- Heat the heavy cream, whole milk, sugar, and salt in a saucepan until warm.
- Whisk the egg yolks until smooth, then temper with the warm cream mixture.
- Gradually add the egg mixture back into the saucepan and stir until thickened, about 5–7 minutes.
- Remove from heat and stir in the rum and nutmeg. Cool and refrigerate for at least 4 hours.
- Churn in an ice cream maker according to instructions, adding the soaked raisins during the last 5 minutes.
- Transfer to an airtight container and freeze for at least 4 hours before serving.
Notes
For best results, soak the raisins overnight and monitor the churning process to avoid over-churning.
