Delightful French macarons infused with rose and rich dark chocolate flavors, perfect for special occasions or tea parties.
Ingredients

- 1 1/2 cups powdered sugar
- 1 cup almond flour
- 3 large egg whites
- 1/4 cup granulated sugar
- 1 tsp rose water
- 1/4 cup unsweetened cocoa powder (dark chocolate)
- A pinch of salt
- 1/2 cup heavy cream
- 4 oz dark chocolate (70% cocoa), chopped
- 1 tsp rose water (for ganache)
- 2 tbsp unsalted butter
Instructions
- Prepare the macaron shells: Preheat oven to 300°F (150°C) and prepare baking sheets. Pulse powdered sugar and almond flour together, sift mixture.
- Beat egg whites with a pinch of salt until soft peaks form. Gradually add granulated sugar, beating until stiff peaks.
- Fold the almond flour mixture into the meringue in batches.
- Add rose water and cocoa powder to the batter, fold until fully incorporated. Pipe small circles onto the baking sheets.
- Allow macarons to rest for 30 minutes until tops are dry. Bake for 15-18 minutes.
- Cool the macarons completely on a wire rack.
- Heat heavy cream until simmering. Pour over chopped dark chocolate, let sit, then stir until smooth. Add rose water and butter for ganache.
- Spread or pipe ganache onto the flat side of one macaron shell and sandwich with another. Let filled macarons rest in the fridge for 24 hours before serving.
Notes
For best results, ensure egg whites are at room temperature and avoid mixing bowl contamination to achieve stable meringue.
