- 1 pinch salt
- 1 cup ricotta cheese
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- 4 slices crusty bread, toasted
- Fresh thyme or basil leaves, for garnish
Instructions
- Preheat your oven to 375°F (190°C). In a bowl, toss the sliced strawberries with honey, balsamic vinegar, and a pinch of salt. Spread the mixture on a baking sheet and roast for 15-20 minutes, stirring halfway through.
- While the strawberries are roasting, prepare the whipped ricotta. In a bowl, combine ricotta, honey, and vanilla extract. Blend until smooth and creamy.
- Toast your slices of bread until golden and crispy.
- Spread a generous amount of whipped ricotta on each piece of toast.
- Top with the roasted strawberries, spooning the warm fruit over the ricotta. Drizzle with extra honey.
- If desired, garnish with thyme or basil leaves. Serve immediately.
