Description

A delightful blend of roasted strawberries and creamy whipped ricotta, perfect for breakfast or brunch.

Ingredients

Scale
  • 1 pint fresh strawberries, hulled and sliced
  • 1 tablespoon honey (plus extra for drizzling)
  • 1 teaspoon balsamic vinegar
  • 1 pinch salt
  • 1 cup ricotta cheese
  • 1 tablespoon honey
  • 1/2 teaspoon vanilla extract
  • 4 slices crusty bread, toasted
  • Fresh thyme or basil leaves, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). In a bowl, toss the sliced strawberries with honey, balsamic vinegar, and a pinch of salt. Spread the mixture on a baking sheet and roast for 15-20 minutes, stirring halfway through.
  2. While the strawberries are roasting, prepare the whipped ricotta. In a bowl, combine ricotta, honey, and vanilla extract. Blend until smooth and creamy.
  3. Toast your slices of bread until golden and crispy.
  4. Spread a generous amount of whipped ricotta on each piece of toast.
  5. Top with the roasted strawberries, spooning the warm fruit over the ricotta. Drizzle with extra honey.
  6. If desired, garnish with thyme or basil leaves. Serve immediately.

Notes

Ensure strawberries are ripe for the best flavor and watch the toast closely to avoid burning.
