Ingredients

  • 1 pound organic baby carrots, with green ends cut
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Fresh chopped parsley for serving
  • 6 ounces feta cheese
  • 2 ounces cream cheese
  • 2 tablespoons lemon juice
  • 1/3 cup olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Place the washed and peeled carrots on a large baking sheet.
  3. Combine the olive oil, honey, cumin, paprika, cinnamon, salt, and black pepper in a bowl.
  4. Whisk the mixture until well combined.
  5. Pour this blend over the carrots and toss to coat.
  6. Roast the carrots for 20-25 minutes until tender and charred.
  7. Garnish with freshly chopped parsley before serving.
  8. In a food processor, combine feta cheese, cream cheese, lemon juice, olive oil, salt, and pepper.
  9. Blend until smooth and creamy.
