  • 1/4 cup heavy whipping cream
  • 2 tablespoons powdered sugar (for the whipped cream)

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Prepare the crust by combining graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan and bake for 10 minutes.
  3. Make the cheesecake filling by beating cream cheese until smooth, then adding sour cream, granulated sugar, vanilla extract, cocoa powder, and red food coloring.
  4. Incorporate the eggs one at a time, then mix in the flour until smooth.
  5. Bake the cheesecake mixture over the cooled crust for 55-60 minutes until the center is set with a slight jiggle.
  6. Cool the cheesecake in the oven with the door slightly ajar, then refrigerate for at least 4 hours or overnight.
  7. Prepare the strawberry topping by mixing sliced strawberries with 2 tablespoons of sugar and letting sit for 10 minutes.
  8. Whip the heavy cream with powdered sugar until stiff peaks form.
  9. Assemble by spreading whipped cream on top of the cheesecake and spooning the strawberry mixture over it.
