- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable or chicken broth
- 1 cup spinach, chopped
- 1 package (9 oz) frozen cheese ravioli
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- Salt and pepper to taste
- Fresh Parmesan cheese, for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until softened, about 3-4 minutes.
- Toss in the minced garlic and let it mingle with the onion for about a minute.
- Add the diced tomatoes, broth, oregano, basil, salt, and pepper; stir to combine.
- Bring to a gentle boil, then reduce heat to let it simmer.
- Carefully add the frozen cheese ravioli and cook according to package instructions, typically 4-5 minutes.
- Stir in the chopped spinach just before serving; allow it to wilt for another 2-3 minutes.
- Ladle the soup into bowls and garnish with freshly grated Parmesan cheese.
Notes
For a quick version, use pre-chopped vegetables and frozen ravioli. Enhance flavors by tasting and adjusting seasoning as needed.
