Ingredients

  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • Fresh Parmesan cheese, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until softened, about 3-4 minutes.
  3. Toss in the minced garlic and let it mingle with the onion for about a minute.
  4. Add the diced tomatoes, broth, oregano, basil, salt, and pepper; stir to combine.
  5. Bring to a gentle boil, then reduce heat to let it simmer.
  6. Carefully add the frozen cheese ravioli and cook according to package instructions, typically 4-5 minutes.
  7. Stir in the chopped spinach just before serving; allow it to wilt for another 2-3 minutes.
