- 1 1/2 cups crushed graham crackers
- 1/4 cup melted butter
- 2 tbsp sugar
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 2 eggs
- 1 1/2 cups fresh raspberries
- 1/4 cup sugar
- 1 tsp lemon juice
- 1 1/2 tsp gelatin powder
- 2 tbsp water
- 1/2 cup heavy cream, whipped
Instructions
- Preheat your oven to 325°F (163°C). In a mixing bowl, combine the crushed graham crackers, melted butter, and 2 tablespoons of sugar. Press this mixture firmly into the bottom of a springform pan. Bake for approximately 10 minutes until golden and set. Set aside to cool.
- Beat the softened cream cheese with 1/2 cup sugar and 1 teaspoon vanilla extract until smooth and creamy. Gradually add the sour cream, mixing until well combined. Crack the eggs in one at a time, beating gently.
- Pour the cheesecake batter over your cooled crust and spread it evenly. Bake for about 40 minutes, or until set with a slight jiggle. Allow to cool completely.
- Blend the raspberries, 1/4 cup sugar, and 1 teaspoon lemon juice until smooth. Strain the mixture through a fine mesh sieve to remove seeds.
- Sprinkle the gelatin over 2 tablespoons of water and let sit for 5 minutes to bloom. Heat gently until dissolved, then stir into the raspberry puree.
- Whip the heavy cream until soft peaks form. Gently fold the raspberry mixture into the whipped cream.
- Spoon the mousse over the cooled cheesecake and smooth it out. Refrigerate for at least 4 hours or overnight.
- Garnish with fresh raspberries before serving.
