Ingredients

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cocoa powder
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, at room temperature
  • 2 large eggs, at room temperature
  • 2 tbsp red food coloring
  • 1 tsp white distilled vinegar
  • 1 tsp vanilla extract
  • 1 tsp (or more, as needed for color) purple food coloring
  • 1 pound cream cheese, softened
  • 2 sticks unsalted butter, at room temperature
  • 1 tsp vanilla extract
  • 4 cups sifted confectioners’ sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and flouring them or lining with parchment paper.
  2. Whisk together the flour, sugar, baking soda, salt, and cocoa powder until fully combined.
  3. Combine the vegetable oil, buttermilk, eggs, red food coloring, vinegar, and vanilla extract in a separate bowl.
  4. Mix the wet ingredients until smooth and creamy.
  5. Pour the wet mixture into the dry ingredients and stir until combined. Add the purple food coloring to achieve the desired color.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the cakes in their pans for 10 minutes, then remove and let them cool completely on a wire rack.
  9. Beat the cream cheese and butter together until smooth for the frosting.
  10. Add the vanilla extract and gradually mix in the confectioners’ sugar until smooth.
  11. Assemble the cake by spreading frosting on top of the first layer and placing the second layer on top. Frost the entire cake with remaining frosting.
  12. Decorate with sprinkles or edible flowers as desired. Slice, serve, and enjoy!
