Ingredients

  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1/4 cup all-purpose flour
  • 1 tsp vanilla extract
  • 1 tbsp honey or maple syrup
  • 1 cup fresh or frozen blueberries
  • 1/2 tsp baking powder
  • A pinch of salt
  • Fresh mint or sliced almonds for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a small baking dish.
  2. Whisk together the eggs, cottage cheese, flour, vanilla extract, honey or maple syrup, baking powder, and a pinch of salt in a medium bowl.
  3. Fold in the blueberries gently, being careful not to crush them.
  4. Pour the mixture into the prepared baking dish and bake for 35 to 40 minutes until golden brown and a toothpick comes out clean.
  5. Cool slightly before serving and garnish with fresh mint or sliced almonds.

Notes
