- 1 1/2 cups cottage cheese
- 4 large eggs
- 1/4 cup all-purpose flour
- 1 tsp vanilla extract
- 1 tbsp honey or maple syrup
- 1 cup fresh or frozen blueberries
- 1/2 tsp baking powder
- A pinch of salt
- Fresh mint or sliced almonds for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease a small baking dish.
- Whisk together the eggs, cottage cheese, flour, vanilla extract, honey or maple syrup, baking powder, and a pinch of salt in a medium bowl.
- Fold in the blueberries gently, being careful not to crush them.
- Pour the mixture into the prepared baking dish and bake for 35 to 40 minutes until golden brown and a toothpick comes out clean.
- Cool slightly before serving and garnish with fresh mint or sliced almonds.
Notes
