Ingredients

  • 1/2 cup pistachio paste
  • 1/2 cup chopped roasted pistachios
  • Green food coloring (optional)
  • Graham cracker crumbs (optional for swirl)

Instructions

  1. Blend the softened cream cheese, granulated sugar, pistachio paste, vanilla extract, almond extract, and whole milk until smooth.
  2. Whisk in the heavy cream until well incorporated.
  3. Add a few drops of green food coloring (if desired) and stir until evenly distributed.
  4. Chill the mixture in the fridge for at least 240 minutes.
  5. Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions, typically around 20-30 minutes.
  6. Fold in the chopped roasted pistachios and graham cracker crumbs.
  7. Transfer the ice cream to a freezer-safe container and freeze until firm, about 240-360 minutes or overnight.
