Instructions
- Preheat the oven to 350°F (175°C).
- Prepare two 9-inch round cake pans by greasing and flouring them.
- Mix the all-purpose flour, granulated sugar, baking soda, salt, and cocoa powder in a large bowl.
- Combine the vegetable oil, buttermilk, eggs, red food coloring, white vinegar, and vanilla extract in a separate bowl.
- Blend the wet mixture into the dry ingredients, mixing gently until just combined.
- Divide the batter evenly into the prepared pans and bake for 25-30 minutes.
- Cool the cakes in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Frost the softened cream cheese and unsalted butter in a bowl until smooth, then gradually add the powdered sugar and vanilla extract.
- Assemble the cake by frosting the first layer, adding the second layer, then generously covering the top and sides with frosting.
- Decorate with edible glitter, fresh berries, or delicate flowers if desired.
