Instructions
- Preheat your oven to 350°F (175°C) and prepare two 8-inch round cake pans by greasing and flouring them well.
- Combine the all-purpose flour, baking powder, and salt in a medium bowl, whisking until well combined.
- Beat the softened butter and white sugar together in a large mixing bowl until light and fluffy, about 3 minutes.
- Add the eggs one by one, beating well after each addition.
- Stir in the vanilla extract and pink dragon fruit puree until fully blended.
- Gradually add the dry mixture to the wet ingredients, alternating with the milk. Mix until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake your cakes in the preheated oven for 25-30 minutes.
- Allow the cakes to cool in their pans for about 10 minutes, then carefully flip them onto a wire rack to cool completely.
- Beat the softened butter in a large bowl until smooth and creamy.
- Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- Stir in the vanilla extract, heavy cream, and pink dragon fruit puree until thoroughly blended.
- Spread a generous layer of frosting on top of one cake, place the second cake on top, and frost the entire exterior.
- Decorate with edible flowers if desired, then slice, serve, and enjoy.
