- 2–3 tablespoons reserved pineapple juice
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan by greasing and flouring it.
- Whisk together the all-purpose flour, baking soda, and salt in a medium bowl.
- Beat the softened cream cheese, granulated sugar, and vanilla extract in a large bowl until smooth and creamy.
- Add the beaten egg, sour cream, and drained crushed pineapple, mixing well.
- Add the dry mixture to the wet ingredients gradually, stirring gently until just combined.
- Pour the batter into your prepared loaf pan and smooth the top.
- Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
- Whisk together the powdered sugar and reserved pineapple juice for the glaze.
- Cool the bread for about 10 minutes before drizzling the glaze over the top and let it cool completely before slicing.
