- 3 large eggs

- 1 can (20 oz) crushed pineapple, undrained

- 1 cup powdered sugar
- 1 container (8 oz) whipped topping (e.g., Cool Whip)
- 1 can (15 oz) crushed pineapple, well-drained
- 1/2 cup sweetened shredded coconut (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13-inch baking dish.
- Combine the yellow cake mix, eggs, vegetable oil, and undrained crushed pineapple in a large mixing bowl. Beat until smooth.
- Pour the batter into the baking dish and bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow the cake to cool completely in the pan on a wire rack.
- Beat cream cheese and powdered sugar in a separate bowl until smooth and creamy.
- Fold in the whipped topping gently.
- Spread the cream cheese frosting over the cooled cake.
- Sprinkle the well-drained crushed pineapple over the frosting and optionally add shredded coconut.
- Refrigerate for at least 2 hours before serving.
