- 1 box of yellow cake mix
- 3 large eggs
- 1/2 cup of vegetable oil
- 1 can (20 oz) of crushed pineapple, undrained
- 1 package (8 oz) of cream cheese, softened
- 1 cup of powdered sugar
- 1 container (8 oz) of whipped topping (like Cool Whip)
- 1 can (15 oz) of crushed pineapple, well-drained
- 1/2 cup of sweetened shredded coconut (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×13-inch baking dish.
- Combine the yellow cake mix, eggs, vegetable oil, and the undrained crushed pineapple in a large mixing bowl.
- Beat the mixture until it’s smooth and well incorporated.
- Pour the cake batter into the prepared baking dish.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the dish.
- Beat the softened cream cheese and powdered sugar together until smooth and creamy.
- Fold in the whipped topping into the cream cheese mixture.
- Spread the frosting evenly over the cooled cake.
- Sprinkle the well-drained crushed pineapple over the top of the frosting.
- Optionally, add a sprinkle of shredded coconut for a beautiful finish.
- Refrigerate the cake for at least 2 hours before serving.
