Description

A delightful tropical dessert with a sweet, moist cake and creamy topping, perfect for gatherings and special occasions.


Ingredients

  • 1 box of yellow cake mix
  • 3 large eggs
  • 1/2 cup of vegetable oil
  • 1 can (20 oz) of crushed pineapple, undrained
  • 1 package (8 oz) of cream cheese, softened
  • 1 cup of powdered sugar
  • 1 container (8 oz) of whipped topping (like Cool Whip)
  • 1 can (15 oz) of crushed pineapple, well-drained
  • 1/2 cup of sweetened shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×13-inch baking dish.
  3. Combine the yellow cake mix, eggs, vegetable oil, and the undrained crushed pineapple in a large mixing bowl.
  4. Beat the mixture until it’s smooth and well incorporated.
  5. Pour the cake batter into the prepared baking dish.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely in the dish.
  8. Beat the softened cream cheese and powdered sugar together until smooth and creamy.
  9. Fold in the whipped topping into the cream cheese mixture.
  10. Spread the frosting evenly over the cooled cake.
  11. Sprinkle the well-drained crushed pineapple over the top of the frosting.
  12. Optionally, add a sprinkle of shredded coconut for a beautiful finish.
  13. Refrigerate the cake for at least 2 hours before serving.
