Description

A refreshing tropical treat made with ripe pineapple, creamy coconut milk, and zesty lime to cool off on hot days.


Ingredients

  • 2 cups fresh ripe pineapple, chopped into bite-sized pieces
  • 1 can (13.5 oz) creamy coconut milk
  • 1/4 cup fresh lime juice
  • 23 tablespoons honey or preferred natural sweetener

Instructions

  1. Blend the Ingredients: Put chopped pineapple, coconut milk, lime juice, and honey in a blender and blend until smooth.
  2. Pour into Molds: Carefully pour the blended mixture into popsicle molds, leaving space for expansion.
  3. Insert Sticks: Center the popsicle sticks in the molds and secure them upright.
  4. Freeze: Place molds in the freezer for at least 4 hours or until completely firm.
  5. Release and Enjoy: Run molds under warm water briefly and gently pull out the popsicles to enjoy.

Notes

For a creamier texture, add a splash of vanilla extract. You can also mix in diced mango or berries for different fruit popsicles.
