A refreshing tropical treat made with ripe pineapple, creamy coconut milk, and zesty lime to cool off on hot days.
Ingredients

- 2 cups fresh ripe pineapple, chopped into bite-sized pieces
- 1 can (13.5 oz) creamy coconut milk
- 1/4 cup fresh lime juice
- 2–3 tablespoons honey or preferred natural sweetener
Instructions
- Blend the Ingredients: Put chopped pineapple, coconut milk, lime juice, and honey in a blender and blend until smooth.
- Pour into Molds: Carefully pour the blended mixture into popsicle molds, leaving space for expansion.
- Insert Sticks: Center the popsicle sticks in the molds and secure them upright.
- Freeze: Place molds in the freezer for at least 4 hours or until completely firm.
- Release and Enjoy: Run molds under warm water briefly and gently pull out the popsicles to enjoy.
Notes
For a creamier texture, add a splash of vanilla extract. You can also mix in diced mango or berries for different fruit popsicles.
