Description
A gourmet twist on the classic grilled cheese, featuring basil pesto, creamy mozzarella, and provolone on artisan bread.
Ingredients

- 4 slices artisan bread
- 2–3 tbsp unsalted butter, softened
- 4 tbsp basil pesto
- 1–2 oz sliced mozzarella cheese
- 1–2 oz sliced provolone cheese
Instructions
- Preheat a large cooking pan over medium to medium-low heat.
- Spread softened butter on one side of each slice of bread.
- Spread basil pesto on the inside of each slice of bread.
- Layer mozzarella cheese on one half and provolone on the other half of the bread.
- Place the bread slices in the preheated pan with the buttered side down.
- Toast until the bread is golden-brown and the cheeses melt completely.
- Combine the two halves together and apply light pressure.
- Let the sandwich rest for 5-10 minutes before cutting into desired shape.
Notes
Experiment with different artisan breads or add slices of fresh tomato for extra flavor.
