Ingredients

  • 1 lb peaches, sliced
  • 1/4 cup granulated sugar
  • 1 Tbsp all-purpose flour
  • 1/2 tsp ground cinnamon
  • 1/2 tsp pure vanilla extract
  • 1/2 Tbsp unsalted butter, cut into small pieces

Instructions

  1. Prepare the Dough: In a mixing bowl, combine 1 1/3 cup of all-purpose flour, 1 tablespoon of granulated sugar, and 1/2 teaspoon of fine sea salt. Cut in the 8 tablespoons of very cold unsalted butter until the mixture becomes crumbly. Gradually add 6 tablespoons of ice water until a dough forms.
  2. Chill the Dough: Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for about 30 minutes.
  3. Prepare the Filling: Toss the sliced peaches with 1/4 cup of granulated sugar, 1 tablespoon of flour, 1/2 teaspoon of ground cinnamon, and 1/2 teaspoon of pure vanilla extract. Let it sit for 15-20 minutes.
  4. Roll Out the Dough: Preheat your oven to 400°F (200°C). Roll out the chilled dough into a 12-inch circle.
  5. Assemble the Galette: Spoon the peach mixture into the center of the dough, leaving a 2-inch border. Fold the edges over the filling.
  6. Finish the Galette: Dot the filling with small pieces of remaining butter, brush the crust with the egg wash, and sprinkle with coarse sugar.
  7. Bake and Serve: Bake for 30-35 minutes until the crust is golden brown and filling is bubbly. Let cool slightly before serving.

Notes

For the best results, use cold ingredients and choose ripe peaches. Consider adding nutmeg or ginger for extra flavor.
