Ingredients

  • 1/2 cup canned peach puree (or fresh pureed peaches)
  • 1/4 cup milk
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 2 oz cream cheese, softened
  • 1 tsp vanilla extract (for frosting)
  • 2 tbsp peach puree (or fresh peach juice)
  • A pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together the all-purpose flour, baking powder, baking soda, and salt in a medium bowl.
  3. Beat the softened butter and sugar together in a large bowl until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition and stirring in the vanilla extract.
  5. Gradually add the dry mixture to the butter mixture in three parts, alternating with the sour cream and milk.
  6. Stir in the peach puree gently until just combined.
  7. Divide the cupcake batter among the lined muffin tins, filling each about two-thirds full.
  8. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted comes out clean.
  9. Cool the cupcakes in the tin before transferring them to a wire rack.
  10. Beat together the frosting ingredients until smooth and fluffy.
  11. Pipe or spread the peach frosting onto cooled cupcakes and decorate if desired.
