- Salt and freshly ground pepper to taste
- 1 tablespoon vegetable oil
- 2 tablespoons butter
- 2 cloves garlic, smashed
- 2 sprigs rosemary or thyme
- 1 cup heavy cream
- 1/2 cup Gorgonzola cheese, crumbled
- Freshly ground pepper to taste
- 2 tablespoons chopped parsley, for garnish
Instructions
- Pat the New York strip steak dry with a paper towel, then season generously with salt and pepper.
- Heat a large cast-iron skillet over medium-high heat until smoking hot.
- Add vegetable oil and swirl to coat the pan.
- Place the steak in the skillet and cook without moving for about 30 seconds.
- Flip the steak using tongs and continue flipping every minute.
- Cook until both sides are seared and internal temperature reaches 145°F (about 8 minutes).
- Add butter, smashed garlic, and herbs to the skillet, basting the steak with the melted butter.
- Remove the steak to a cutting board and rest for at least 2 minutes.
- Slice the steak against the grain.
- In a separate saucepan, bring heavy cream to a gentle simmer over medium heat.
- Add the crumbled Gorgonzola cheese and whisk until smooth.
- Plate the sliced steak, drizzle with sauce, and garnish with parsley.
Notes
Choose well-marbled steak for maximum flavor and juiciness. Let the steak rest for optimal tenderness.
