Description

A delightful blend of cod fillets in a luscious tomato basil sauce, bursting with vibrant Mediterranean flavors.


Ingredients

  • 4 cod fillets (about 6 oz each)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tbsp fresh basil, chopped (for garnish)
  • 1 tbsp lemon juice
  • 1 tbsp capers (optional)
  • 1 tbsp balsamic vinegar (optional)

Instructions

  1. Season the cod fillets with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the cod fillets and sear for about 3-4 minutes on each side until golden brown.
  4. Remove the fillets from the skillet and set aside.
  5. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  6. Add diced tomatoes, oregano, and basil; stir and simmer for 5-7 minutes.
  7. (Optional) Stir in capers and balsamic vinegar.
  8. Return the cod to the skillet, spoon sauce over the fillets, and cook for an additional 2-3 minutes.
  9. Drizzle with lemon juice, garnish with fresh basil, and serve immediately.
