Ingredients

- 4 cod fillets (about 6 oz each)
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tbsp garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tbsp fresh basil, chopped (for garnish)
- 1 tbsp lemon juice
- 1 tbsp capers (optional)
- 1 tbsp balsamic vinegar (optional)
Instructions
- Season the cod fillets with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the cod fillets and sear for about 3-4 minutes on each side until golden brown.
- Remove the fillets from the skillet and set aside.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Add diced tomatoes, oregano, and basil; stir and simmer for 5-7 minutes.
- (Optional) Stir in capers and balsamic vinegar.
- Return the cod to the skillet, spoon sauce over the fillets, and cook for an additional 2-3 minutes.
- Drizzle with lemon juice, garnish with fresh basil, and serve immediately.
