- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon minced garlic
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1.5 lb jumbo shrimp, peeled & deveined, tail-on
- 1 medium zucchini, cut into round slices
- 1 medium red onion, cut into cubes
- Fresh dill to garnish
- Lemon wedges to garnish
Instructions
- Prepare the Marinade: In a small bowl, combine fresh lemon juice, olive oil, paprika, onion powder, oregano, minced garlic, lemon zest, salt, and black pepper. Whisk until well blended.
- Marinate the Shrimp: Pour the marinade over the peeled and deveined shrimp, tossing until fully coated. Reserve 2 tablespoons of marinade for brushing later and let the shrimp marinate for at least 30 minutes.
- Build the Skewers: Thread a shrimp onto a skewer, followed by a slice of zucchini and a cube of red onion. Repeat until the skewer is filled.
- Broil the Skewers: Preheat your oven’s broiler. Place skewers on a baking rack or pan and broil on high for 3-5 minutes on each side until the shrimp is opaque.
- Garnish and Serve: Remove skewers from the oven, and brush with reserved marinade. Serve garnished with fresh dill and lemon wedges.
Notes
For more intense flavor, let the shrimp marinate for up to two hours. Wooden skewers should be soaked in water for 30 minutes before use.
