Ingredients

  • 1 cup crushed Oreo cookies
  • 4 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/4 cup milk (adjust for desired consistency)
  • 1 teaspoon vanilla extract (for drizzle)
  • Extra crushed Oreos for topping
  • Optional whipped cream

Instructions

  1. Sift 2 cups of all-purpose flour into a large mixing bowl.
  2. Add 2 tablespoons of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt; mix well.
  3. In a separate bowl, crack 2 large eggs and whisk with 1 1/2 cups of milk and 1 teaspoon of vanilla extract.
  4. Drizzle in 1/4 cup of melted unsalted butter and stir until incorporated.
  5. Pour the wet mixture into the dry ingredients and mix until just combined; fold in 1 cup of crushed Oreo cookies.
  6. Preheat a non-stick griddle over medium heat and lightly grease it.
  7. Pour 1/4 cup of batter onto the griddle for each pancake.
  8. Cook until bubbles form on the surface, then flip and cook until golden brown.
  9. For the drizzle, beat together 4 ounces of softened cream cheese and 1 cup of powdered sugar, then mix in 1/4 cup of milk and 1 teaspoon of vanilla extract until smooth.
  10. Drizzle cream cheese glaze over the pancakes, sprinkle with extra crushed Oreos, and serve with whipped cream if desired.
