Description

Delicious and zesty cookies with a delightful crunch from poppy seeds, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 tablespoons poppy seeds
  • 2 teaspoons orange zest
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg + 2 egg yolks, room temperature
  • 1 1/2 teaspoons orange extract
  • 1 drop of orange food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the all-purpose flour, salt, baking soda, and poppy seeds. Whisk together and set aside.
  3. In a separate bowl, beat together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  4. Add the orange zest, egg, egg yolks, orange extract, and food coloring (if using) to the butter mixture and mix until well blended.
  5. Gradually add the dry mixture to the wet mixture, stirring just until a dough forms.
  6. Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For extra chewy cookies, chill the dough for about 30 minutes before baking. These cookies can also be made gluten-free by substituting the flour.
