- 1/4 cup melted butter
- 8 oz mascarpone cheese, softened
- 1 cup cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1/2 cup fresh orange juice
- Zest of 1 orange
- 1/2 tsp vanilla extract
- 1/2 cup dark chocolate chips
- 1/4 cup heavy cream
Instructions
- Prepare the Crust: In a mixing bowl, combine the crushed graham crackers with melted butter until it resembles damp sand. Press this blend firmly into the bottom of a springform pan to form a crust, then bake it in a preheated oven at 350°F (175°C) for 8 minutes.
- Make the Cheesecake Filling: In a large mixing bowl, beat the mascarpone cheese and cream cheese with sugar until smooth. Add in the eggs, blending well after each. Pour in the fresh orange juice, orange zest, and vanilla extract, mixing until combined.
- Pour the cheesecake filling over the warm crust. Bake at 325°F (160°C) for 45-50 minutes until the center is set but slightly jiggly. Allow it to cool before refrigerating, chilling for at least 4 hours or overnight.
- Prepare the Chocolate Ganache: Heat the heavy cream in a small saucepan until simmering. Pour over the dark chocolate chips in a bowl. Let it sit for a minute, then stir until smooth. Drizzle over the chilled cheesecake.
