- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 8 oz mushrooms, sliced
- 4 cups chicken or vegetable broth
- 2 cups heavy cream
- 1 pound linguine or fettuccine pasta
- 3 cups fresh spinach
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- Red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add 4 cloves of minced garlic and 8 oz of sliced mushrooms and sauté for about 5 minutes.
- Pour in 4 cups of chicken or vegetable broth and 2 cups of heavy cream.
- Bring the mixture to a boil, then add 1 pound of linguine or fettuccine pasta.
- Reduce the heat to medium-low and cook, stirring occasionally, until the pasta is al dente, about 10-12 minutes.
- Stir in 3 cups of fresh spinach and cook for 2-3 minutes until wilted.
- Add 1 cup of grated Parmesan cheese and stir until melted.
- Garnish with fresh parsley and additional Parmesan cheese, if desired.
Notes
For a lighter version, substitute heavy cream with half and half or a plant-based alternative. Add cooked chicken, shrimp, or tofu for a protein boost.
