Description

A delectable one-pot pasta dish featuring garlic, mushrooms, and creamy Parmesan cheese that’s perfect for busy weeknights and family dinners.


Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups chicken or vegetable broth
  • 2 cups heavy cream
  • 1 pound linguine or fettuccine pasta
  • 3 cups fresh spinach
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add 4 cloves of minced garlic and 8 oz of sliced mushrooms and sauté for about 5 minutes.
  3. Pour in 4 cups of chicken or vegetable broth and 2 cups of heavy cream.
  4. Bring the mixture to a boil, then add 1 pound of linguine or fettuccine pasta.
  5. Reduce the heat to medium-low and cook, stirring occasionally, until the pasta is al dente, about 10-12 minutes.
  6. Stir in 3 cups of fresh spinach and cook for 2-3 minutes until wilted.
  7. Add 1 cup of grated Parmesan cheese and stir until melted.
  8. Garnish with fresh parsley and additional Parmesan cheese, if desired.

Notes

For a lighter version, substitute heavy cream with half and half or a plant-based alternative. Add cooked chicken, shrimp, or tofu for a protein boost.
