- 3/4 tsp Smoked Paprika

- 1/2 tsp Black Pepper
- 1/4 – 1/2 tsp Chili Flakes
- 1/4 tsp Dried Thyme
- 1 medium White Onion, finely diced
- 3 cloves Garlic, finely diced
- 500g Minced/Ground Beef
- 2 tbsp Tomato Puree
- 600ml Beef Stock, warm
- 500g Tomato Passata
- 180ml Double/Heavy Cream
- 1 tsp Worcestershire Sauce
- 300g uncooked Conchiglie Pasta
- Finely diced Fresh Parsley, to serve (optional)
- Olive Oil, as needed
Instructions
- Begin by adding a drizzle of olive oil to a large pot set over medium heat.
- Allow it to warm slightly, then add the finely diced onion.
- Sauté until the onion softens and turns golden.
- Add the garlic, cooking for about a minute longer.
- Introduce the minced beef, breaking it apart until browned.
- Sprinkle in the seasoning mix: salt, smoked paprika, dried oregano, black pepper, chili flakes, and thyme.
- Stir in the tomato puree and fry for a minute.
- Pour in the warm beef stock, tomato passata, double cream, and Worcestershire sauce.
- Stir thoroughly, then add the uncooked conchiglie pasta.
- Bring the mixture to a gentle boil, then reduce to a simmer.
- Cook until the sauce has thickened and the pasta is al dente, stirring frequently.
- Check for seasoning and adjust flavors as needed.
- Serve hot, garnished with fresh parsley if desired.
Notes
Feel free to add seasonal vegetables or swap pasta shapes as desired. Top with Parmesan or crispy bacon for extra flavor.
