Ingredients

  • 3/4 tsp Smoked Paprika
  • 1/2 tsp Dried Oregano
  • 1/2 tsp Black Pepper
  • 1/41/2 tsp Chili Flakes
  • 1/4 tsp Dried Thyme
  • 1 medium White Onion, finely diced
  • 3 cloves Garlic, finely diced
  • 500g Minced/Ground Beef
  • 2 tbsp Tomato Puree
  • 600ml Beef Stock, warm
  • 500g Tomato Passata
  • 180ml Double/Heavy Cream
  • 1 tsp Worcestershire Sauce
  • 300g uncooked Conchiglie Pasta
  • Finely diced Fresh Parsley, to serve (optional)
  • Olive Oil, as needed

Instructions

  1. Begin by adding a drizzle of olive oil to a large pot set over medium heat.
  2. Allow it to warm slightly, then add the finely diced onion.
  3. Sauté until the onion softens and turns golden.
  4. Add the garlic, cooking for about a minute longer.
  5. Introduce the minced beef, breaking it apart until browned.
  6. Sprinkle in the seasoning mix: salt, smoked paprika, dried oregano, black pepper, chili flakes, and thyme.
  7. Stir in the tomato puree and fry for a minute.
  8. Pour in the warm beef stock, tomato passata, double cream, and Worcestershire sauce.
  9. Stir thoroughly, then add the uncooked conchiglie pasta.
  10. Bring the mixture to a gentle boil, then reduce to a simmer.
  11. Cook until the sauce has thickened and the pasta is al dente, stirring frequently.
  12. Check for seasoning and adjust flavors as needed.
  13. Serve hot, garnished with fresh parsley if desired.

Notes

Feel free to add seasonal vegetables or swap pasta shapes as desired. Top with Parmesan or crispy bacon for extra flavor.
