A comforting casserole with baked chicken and creamy rice, perfect for busy weeknights.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 2 cups Minute Rice (preferably brown)
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can water (use the soup can to measure)
- 1 tablespoon butter
- 1 envelope Lipton Onion Soup mix
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9 x 13 baking pan with butter.
- Combine the cream of mushroom soup, cream of chicken soup, and water in a medium bowl. Add the Minute Rice and mix well.
- Pour the mixture into the buttered pan, spreading it evenly.
- Place the chicken breasts on top of the rice mixture.
- Sprinkle the Lipton Onion Soup mix over the chicken breasts.
- Cover the pan with aluminum foil and place it in the preheated oven.
- Bake for about 60 to 90 minutes, or until the chicken reaches an internal temperature of 165°F.
Notes
For added richness, consider adding sliced mushrooms or a sprinkle of paprika. Fresh parsley can be used for garnish.
