Description

A comforting casserole with baked chicken and creamy rice, perfect for busy weeknights.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups Minute Rice (preferably brown)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can water (use the soup can to measure)
  • 1 tablespoon butter
  • 1 envelope Lipton Onion Soup mix

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9 x 13 baking pan with butter.
  3. Combine the cream of mushroom soup, cream of chicken soup, and water in a medium bowl. Add the Minute Rice and mix well.
  4. Pour the mixture into the buttered pan, spreading it evenly.
  5. Place the chicken breasts on top of the rice mixture.
  6. Sprinkle the Lipton Onion Soup mix over the chicken breasts.
  7. Cover the pan with aluminum foil and place it in the preheated oven.
  8. Bake for about 60 to 90 minutes, or until the chicken reaches an internal temperature of 165°F.

Notes

For added richness, consider adding sliced mushrooms or a sprinkle of paprika. Fresh parsley can be used for garnish.
