- 1 package of chocolate chip cookie dough (pre-made or homemade)
- 2 cups of vanilla ice cream (softened)
- 1 cup of M&M’s candy
- 1/2 cup of mini chocolate chips
- 1 cup of whipped cream
- 1 tablespoon of powdered sugar
- 1 teaspoon of vanilla extract
- 1/4 cup of chocolate syrup (for drizzling)
Instructions
- Preheat your oven to 350°F (175°C). Prepare a baking sheet lined with parchment paper.
- Roll out the chocolate chip cookie dough into a rectangle shape on the parchment paper.
- Bake the cookie dough according to package instructions (10-12 minutes), until golden brown. Allow to cool completely.
- Soften the vanilla ice cream in a large mixing bowl and stir in the M&M’s and mini chocolate chips.
- Flip the cooled cookie dough onto a large piece of wax paper, peeling off the parchment paper.
- Spread the softened ice cream mixture evenly over the cookie dough.
- Roll the cookie dough into a log from one short edge using the wax paper.
- Freeze the cake roll for at least two hours.
- Whip the cream with powdered sugar and vanilla extract until stiff peaks form.
- Spread the whipped cream over the chilled cake roll.
- Drizzle chocolate syrup over the top and sprinkle extra M&M’s if desired.
Notes
Ensure all ingredients are at room temperature for easier mixing. Use a gentle hand while rolling the dough to avoid cracking.
