Description

A decadent layered dessert combining rich cheesecake, indulgent fudge, and refreshing mint.


Ingredients

  • 1 box chocolate cake mix
  • ½ cup vegetable oil
  • 3 large eggs
  • 1 cup water
  • 2 packages (8 oz each) softened cream cheese
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ teaspoon mint extract
  • ¼ cup sour cream
  • 1 cup semi-sweet chocolate chips
  • ½ cup heavy cream
  • Crushed mint chocolate candies or chips (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your 9-inch springform pan by greasing and flouring it.
  3. Combine the chocolate cake mix with the vegetable oil, three eggs, and one cup of water in a large mixing bowl.
  4. Mix until smooth and velvety.
  5. Pour the chocolate cake batter into the prepared springform pan.
  6. Bake for 20-25 minutes, checking with a toothpick for doneness.
  7. Set the cake aside to cool completely.
  8. Beat the softened cream cheese and sugar until creamy in a large mixing bowl.
  9. Add the two eggs one at a time, mixing thoroughly after each addition.
  10. Stir in the vanilla and mint extracts, then fold in the sour cream.
  11. Pour the cheesecake batter over the cooled chocolate cake layer.
  12. Bake for 35-40 minutes, until the cheesecake is set.
  13. Leave the cheesecake to cool with the door slightly ajar for one hour.
  14. Refrigerate the cake for at least three hours or, preferably, overnight.
  15. Melt the chocolate chips and heavy cream in a microwave-safe bowl, stirring every 30 seconds until smooth.
  16. Add the remaining ¼ teaspoon of vanilla extract and stir to combine.
  17. Pour the fudge layer over the chilled cheesecake.
  18. Refrigerate for at least 30 minutes to set the fudge.
  19. Garnish with crushed mint chocolate candies and fresh mint leaves before serving.

Notes

Allow ingredients, especially cream cheese, to reach room temperature for a smooth batter. Use a springform pan for easy removal.
