Instructions
- Preheat your oven to 350°F (175°C) and prepare a 15×10-inch jelly roll pan with parchment paper.
- Mix the flour, cocoa powder, baking powder, and salt together in a medium bowl.
- Beat the eggs and granulated sugar until light and fluffy, about 3 minutes.
- Add the vegetable oil and vanilla extract to the egg mixture and stir until combined.
- Combine the dry ingredients with the wet mixture, mixing gently until just combined.
- Pour the batter into the prepared jelly roll pan and spread it evenly.
- Bake for 10-12 minutes or until the cake springs back when lightly touched.
- Prepare the mint whipped cream by whipping the heavy cream and powdered sugar until soft peaks form, then add peppermint extract and food coloring.
- Cool the baked cake in the pan for a few minutes before rolling it gently with a powdered sugar-dusted kitchen towel.
- Make the chocolate ganache by heating heavy cream until simmering and pouring it over semisweet chocolate chips, stirring until smooth.
- Assemble the cake roll by spreading the whipped cream over the cooled cake, rolling it back up carefully.
- Drizzle the ganache over the top and garnish with chocolate chips and fresh mint leaves.
- Chill in the refrigerator for at least 1 hour before serving.
