Description

Ingredients

  • 1/4 cup unsweetened cocoa powder

  • 3 large eggs

  • 1 1/2 cups heavy cream, chilled
  • 1 cup powdered sugar
  • 1/2 teaspoon peppermint extract
  • Green food coloring (optional)
  • 1 cup heavy cream (for chocolate ganache)
  • 1 cup semisweet chocolate chips
  • Chocolate chips (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 15×10-inch jelly roll pan with parchment paper.
  2. Mix the flour, cocoa powder, baking powder, and salt together in a medium bowl.
  3. Beat the eggs and granulated sugar until light and fluffy, about 3 minutes.
  4. Add the vegetable oil and vanilla extract to the egg mixture and stir until combined.
  5. Combine the dry ingredients with the wet mixture, mixing gently until just combined.
  6. Pour the batter into the prepared jelly roll pan and spread it evenly.
  7. Bake for 10-12 minutes or until the cake springs back when lightly touched.
  8. Prepare the mint whipped cream by whipping the heavy cream and powdered sugar until soft peaks form, then add peppermint extract and food coloring.
  9. Cool the baked cake in the pan for a few minutes before rolling it gently with a powdered sugar-dusted kitchen towel.
  10. Make the chocolate ganache by heating heavy cream until simmering and pouring it over semisweet chocolate chips, stirring until smooth.
  11. Assemble the cake roll by spreading the whipped cream over the cooled cake, rolling it back up carefully.
  12. Drizzle the ganache over the top and garnish with chocolate chips and fresh mint leaves.
  13. Chill in the refrigerator for at least 1 hour before serving.
