Description

A comforting and flavorful dish layered with ground beef or chicken, black beans, corn, and melted cheeses, all topped with crunchy tortilla chips.


Ingredients

  • 1 lb ground beef or chicken
  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 cup tortilla chips, crushed
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chopped onion and cook until soft and translucent, about 3-4 minutes.
  4. Add the ground beef or chicken; cook until browned.
  5. Stir in the taco seasoning, black beans, diced tomatoes with green chilies, and corn; simmer for 5-7 minutes.
  6. Layer the beef mixture in a greased baking dish, then scatter the crushed tortilla chips over the top.
  7. Sprinkle the shredded cheddar and Monterey Jack cheeses over the casserole.
  8. Bake for 15-20 minutes or until cheese is melted and bubbly.
  9. Garnish with sour cream and green onions before serving.

Notes

Feel free to add optional extras like diced bell peppers or jalapeños. For a creamier base, mix in some cream cheese with the sour cream.
