- 1 lb ground beef or chicken
- 1 onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn kernels
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1 cup tortilla chips, crushed
- 1 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and cook until soft and translucent, about 3-4 minutes.
- Add the ground beef or chicken; cook until browned.
- Stir in the taco seasoning, black beans, diced tomatoes with green chilies, and corn; simmer for 5-7 minutes.
- Layer the beef mixture in a greased baking dish, then scatter the crushed tortilla chips over the top.
- Sprinkle the shredded cheddar and Monterey Jack cheeses over the casserole.
- Bake for 15-20 minutes or until cheese is melted and bubbly.
- Garnish with sour cream and green onions before serving.
Notes
Feel free to add optional extras like diced bell peppers or jalapeños. For a creamier base, mix in some cream cheese with the sour cream.
