Description

A vibrant and delicious dish featuring bell peppers stuffed with fresh spinach, creamy feta, and zesty olives.


Ingredients

  • 4 bell peppers (red, yellow, or orange)
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup cooked quinoa or rice
  • 1/2 cup diced tomatoes
  • 1/4 cup olives, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Olive oil, for sautéing and drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Heat a drizzle of olive oil in a pan over medium heat, then sauté the minced garlic until fragrant.
  4. Add the chopped spinach to the pan and cook until wilted.
  5. Combine the sautéed spinach, crumbled feta, cooked quinoa or rice, diced tomatoes, sliced olives, dried oregano, salt, and pepper in a mixing bowl.
  6. Stuff each bell pepper generously with the mixture.
  7. Place the stuffed peppers upright in a baking dish and drizzle with olive oil.
  8. Bake for 25-30 minutes until the peppers are tender and blistered.
  9. Serve warm and enjoy!

Notes

For added flavor, consider mixing in lemon juice or top with parmesan cheese before baking.
