- 4 bell peppers (red, yellow, or orange)
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 cup cooked quinoa or rice
- 1/2 cup diced tomatoes
- 1/4 cup olives, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil, for sautéing and drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Heat a drizzle of olive oil in a pan over medium heat, then sauté the minced garlic until fragrant.
- Add the chopped spinach to the pan and cook until wilted.
- Combine the sautéed spinach, crumbled feta, cooked quinoa or rice, diced tomatoes, sliced olives, dried oregano, salt, and pepper in a mixing bowl.
- Stuff each bell pepper generously with the mixture.
- Place the stuffed peppers upright in a baking dish and drizzle with olive oil.
- Bake for 25-30 minutes until the peppers are tender and blistered.
- Serve warm and enjoy!
Notes
For added flavor, consider mixing in lemon juice or top with parmesan cheese before baking.
