- 1 tsp baking powder
- 3/4 cup warm water
- 2 tbsp olive oil
- 1 cup feta cheese, crumbled
- 1/4 cup fresh mint, chopped
- 1 tbsp lemon zest
- 1 tbsp olive oil (for brushing)
- Fresh parsley (for garnish)
Instructions
- Combine the all-purpose flour, salt, and baking powder in a large mixing bowl.
- Pour in the warm water and olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
- Cover with a kitchen towel and let it rest for 30 minutes.
- Combine the feta cheese, chopped mint, and lemon zest in a separate bowl to make the filling.
- Roll rested dough into small balls and then into 6-inch circles.
- Place a spoonful of filling in the center of each circle.
- Fold the dough over the filling and pinch the edges to seal.
- Heat a skillet over medium-high heat and add olive oil.
- Cook the stuffed flatbreads for 2-3 minutes on each side until golden brown.
- Garnish with fresh parsley before serving.
