Ingredients

  • 1/2 small-medium red onion, thinly sliced
  • 1/2 cup pitted green olives
  • 1/4 cup fresh lemon juice
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1 teaspoon lemon zest
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 small-medium boiled beets, sliced and diced
  • 1/2 cup finely minced parsley
  • 1/2 cup finely minced mint

Instructions

  1. Gather all ingredients in a large serving bowl.
  2. Combine the red onion, olives, lemon juice, olive oil, honey, lemon zest, kosher salt, and black pepper.
  3. Toss this mixture gently and let it sit for 30 to 45 minutes.
  4. Add the diced beets, parsley, and mint and toss everything together.
  5. Let the salad sit for an additional 15 minutes before serving.

Notes

For a vegan version, substitute honey with agave syrup. Enjoy warm or chilled for enhanced flavors.
