- 1/2 cup pitted green olives
- 1/4 cup fresh lemon juice

- 2 small-medium boiled beets, sliced and diced
- 1/2 cup finely minced parsley
- 1/2 cup finely minced mint
Instructions
- Gather all ingredients in a large serving bowl.
- Combine the red onion, olives, lemon juice, olive oil, honey, lemon zest, kosher salt, and black pepper.
- Toss this mixture gently and let it sit for 30 to 45 minutes.
- Add the diced beets, parsley, and mint and toss everything together.
- Let the salad sit for an additional 15 minutes before serving.
