Description

A comforting fusion of classic meatloaf and creamy mac and cheese, this casserole is perfect for feeding family and friends.


Ingredients

  • 2 pounds lean ground beef
  • 1 sleeve Ritz Crackers, crushed
  • 1 packet Lipton onion soup mix
  • 2 large eggs
  • 1/2 cup ketchup
  • 1/2 cup Sweet Baby Rays barbecue sauce
  • 2 cups elbow macaroni
  • 1 cup whole milk
  • 1 (10.5 oz) can condensed cheddar cheese soup
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/2 cups shredded mozzarella and cheddar cheese blend
  • Parsley or paprika for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large mixing bowl, combine the ground beef, crushed Ritz crackers, Lipton onion soup mix, and eggs. Mix until well combined.
  3. In a separate small bowl, mix together the ketchup and barbecue sauce, dividing it into two equal portions for later use.
  4. Press the meat mixture evenly into the bottom of the greased baking dish. Spread the remaining barbecue sauce over the meatloaf.
  5. Bake for 30 minutes.
  6. While the meatloaf is baking, bring a pot of salted water to a boil and cook the macaroni until al dente. Drain.
  7. In a large bowl, whisk together the milk and condensed cheddar cheese soup, adding in salt, pepper, garlic powder, and onion powder. Stir in the cooked macaroni and 1/2 cup of the cheese blend.
  8. Spread the mac and cheese mixture over the meatloaf.
  9. Sprinkle the remaining cheese blend on top of the casserole.
  10. Bake for an additional 17-20 minutes, or until the cheese is melted and bubbly.
  11. Let the casserole rest for 5-10 minutes and garnish with parsley or paprika before serving.

Notes

This dish can be prepared ahead of time and assembled before baking. It’s great leftover and can be frozen for up to 2 months.
