Description

A comforting dish of tender meatballs infused with Italian herbs, enveloped by creamy cheese and perfectly roasted potatoes.


Ingredients

  • 1 lb ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 4 medium potatoes, peeled and diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground meat, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, pepper, and Italian seasoning in a large bowl.
  3. Form the mixture into meatballs and place each one on a baking sheet.
  4. Toss the diced potatoes with olive oil, garlic powder, salt, and pepper in another bowl.
  5. Spread the seasoned potatoes on a separate baking sheet.
  6. Bake the meatballs for about 20 minutes and the potatoes for about 25-30 minutes.
  7. Gather the cooked meatballs and potatoes into a large baking dish.
  8. Sprinkle the cheddar and mozzarella cheese on top.
  9. Return the dish to the oven for an additional 5-10 minutes until the cheeses are melted and bubbling.
  10. Let the dish cool slightly before serving.

Notes

For a lighter version, use ground turkey or chicken and whole grain breadcrumbs. You can also add vegetables like spinach or bell peppers to the meatball mixture.
