- 1 lb ground beef or turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 4 medium potatoes, peeled and diced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the ground meat, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, pepper, and Italian seasoning in a large bowl.
- Form the mixture into meatballs and place each one on a baking sheet.
- Toss the diced potatoes with olive oil, garlic powder, salt, and pepper in another bowl.
- Spread the seasoned potatoes on a separate baking sheet.
- Bake the meatballs for about 20 minutes and the potatoes for about 25-30 minutes.
- Gather the cooked meatballs and potatoes into a large baking dish.
- Sprinkle the cheddar and mozzarella cheese on top.
- Return the dish to the oven for an additional 5-10 minutes until the cheeses are melted and bubbling.
- Let the dish cool slightly before serving.
Notes
For a lighter version, use ground turkey or chicken and whole grain breadcrumbs. You can also add vegetables like spinach or bell peppers to the meatball mixture.
