Instructions
- Preheat your oven to 375°F (190°C).
- Combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, and minced garlic in a large bowl. Season with salt and pepper.
- Form the mixture into small meatballs and place them on a lined baking sheet.
- Bake the meatballs for 15 to 18 minutes, until golden and cooked through.
- Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
- Pour in chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, and optional red pepper flakes. Let simmer for 4 to 5 minutes.
- Add grated Parmesan to the sauce, stirring until melted.
- Combine the meatballs with the sauce, simmering for another 2 to 3 minutes.
- Serve hot, garnished with parsley and Parmesan.
Notes
Use a cookie scoop for uniform meatballs. For a healthier twist, consider using ground turkey and Greek yogurt instead of heavy cream.
