Ingredients

  • 2 cloves garlic, minced

  • 2 cloves garlic, minced (for sauce)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup chopped sun-dried tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Grated Parmesan, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, and minced garlic in a large bowl. Season with salt and pepper.
  3. Form the mixture into small meatballs and place them on a lined baking sheet.
  4. Bake the meatballs for 15 to 18 minutes, until golden and cooked through.
  5. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  6. Pour in chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, and optional red pepper flakes. Let simmer for 4 to 5 minutes.
  7. Add grated Parmesan to the sauce, stirring until melted.
  8. Combine the meatballs with the sauce, simmering for another 2 to 3 minutes.
  9. Serve hot, garnished with parsley and Parmesan.

Notes

Use a cookie scoop for uniform meatballs. For a healthier twist, consider using ground turkey and Greek yogurt instead of heavy cream.
