Ingredients

  • 1 cup fresh lime juice (about 8 limes)
  • 1 cup diced ripe mango
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeño (seeded and minced)
  • Salt and pepper (to taste)
  • Tortilla chips (for serving)

Instructions

  1. Rinse the shrimp under cold water and pat dry. Marinate the shrimp in a bowl covered with fresh lime juice for about 2 hours in the refrigerator.
  2. Dice the mango, cucumber, red onion, and jalapeño while the shrimp marinates.
  3. After marination, ensure the shrimp are opaque and firm. Drain excess lime juice, but retain some for flavor. In a bowl, combine the shrimp with mango, cucumber, red onion, cilantro, and jalapeño.
  4. Gently toss the mixture and season with salt and pepper to taste, adjusting the lime juice if desired.
  5. Serve immediately with tortilla chips or in lettuce wraps for the best flavor.

Notes

For better flavor, use the freshest shrimp and ripe mangoes. Adding avocado can enhance its richness.
