Instructions
- Rinse the shrimp under cold water and pat dry. Marinate the shrimp in a bowl covered with fresh lime juice for about 2 hours in the refrigerator.
- Dice the mango, cucumber, red onion, and jalapeño while the shrimp marinates.
- After marination, ensure the shrimp are opaque and firm. Drain excess lime juice, but retain some for flavor. In a bowl, combine the shrimp with mango, cucumber, red onion, cilantro, and jalapeño.
- Gently toss the mixture and season with salt and pepper to taste, adjusting the lime juice if desired.
- Serve immediately with tortilla chips or in lettuce wraps for the best flavor.
Notes
For better flavor, use the freshest shrimp and ripe mangoes. Adding avocado can enhance its richness.
