- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1/2 cup pistachio paste or finely ground pistachios
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- Chopped pistachios, for garnish
Instructions
- Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
- Combine the graham cracker crumbs with granulated sugar and finely ground pistachios in a mixing bowl.
- Stir in the melted butter until the mixture resembles wet sand and press it firmly into the bottom of the prepared pan.
- Beat the softened cream cheese and granulated sugar together in a large mixing bowl until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Incorporate the sour cream, vanilla extract, and pistachio paste or finely ground pistachios.
- Pour the cheesecake filling over the crust in the springform pan and bake for 45-50 minutes.
- Turn off the oven and let the cheesecake cool inside with the door closed for about an hour.
- Remove the cheesecake from the oven, cool it completely at room temperature, then refrigerate for at least four hours or overnight.
- Beat the heavy cream and powdered sugar in a separate bowl until stiff peaks form, then gently fold in the pistachio paste or finely ground pistachios.
- Spread the pistachio cream topping over your chilled cheesecake and garnish with chopped pistachios.
- Slice into portions and serve.
