Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted pistachios, finely ground
  • 1/2 cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/2 cup pistachio paste or finely ground pistachios
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • Chopped pistachios, for garnish

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. Combine the graham cracker crumbs with granulated sugar and finely ground pistachios in a mixing bowl.
  3. Stir in the melted butter until the mixture resembles wet sand and press it firmly into the bottom of the prepared pan.
  4. Beat the softened cream cheese and granulated sugar together in a large mixing bowl until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition. Incorporate the sour cream, vanilla extract, and pistachio paste or finely ground pistachios.
  6. Pour the cheesecake filling over the crust in the springform pan and bake for 45-50 minutes.
  7. Turn off the oven and let the cheesecake cool inside with the door closed for about an hour.
  8. Remove the cheesecake from the oven, cool it completely at room temperature, then refrigerate for at least four hours or overnight.
  9. Beat the heavy cream and powdered sugar in a separate bowl until stiff peaks form, then gently fold in the pistachio paste or finely ground pistachios.
  10. Spread the pistachio cream topping over your chilled cheesecake and garnish with chopped pistachios.
  11. Slice into portions and serve.

Notes
