- 1 1/2 cups crushed pistachios
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 3 packages (8 oz each) cream cheese, softened

- 1 tbsp lime juice
- 1 tsp vanilla extract

- 1 cup fresh cherries, pitted and halved

- 2 tbsp honey
- 1/4 cup chopped pistachios for garnish
Instructions
- Preheat your oven to 325°F (163°C).
- Gather the crushed pistachios, sugar, and melted butter in a food processor and pulse until well combined.
- Press this mixture into the bottom of a 9-inch springform pan, forming a crust.
- Bake the crust in the preheated oven for 10 minutes, then remove and set aside to cool.
- Beat the softened cream cheese and sugar in a large bowl until smooth and creamy.
- Add the sour cream, lemon juice, lime juice, and vanilla extract, mixing until well combined.
- Incorporate the eggs one by one, beating well after each addition.
- Pour the cheesecake batter into the cooled pistachio crust, smoothing the top.
- Bake for 50-60 minutes until the edges are set but the center slightly jiggles.
- Cool the cheesecake inside the oven with the door slightly ajar for 1 hour, then refrigerate for at least 4 hours or overnight.
- Combine fresh cherries, lemon juice, lime juice, and honey in a small saucepan and cook over medium heat for 5-7 minutes until thickened.
- Allow the cherry mixture to cool to room temperature, then pour over the chilled cheesecake.
- Garnish with chopped pistachios and serve chilled.

Ensure cream cheese is at room temperature for a smooth texture. For added flair, consider topping with fresh mint leaves or a fruit sauce.
