Ingredients

  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup sour cream
  • 3 large eggs
  • 2 tbsp lemon juice
  • 1 tbsp lime juice
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1 cup fresh cherries, pitted and halved
  • 1 tbsp lemon juice (for cherry mixture)
  • 1 tbsp lime juice (for cherry mixture)
  • 2 tbsp honey
  • 1/4 cup chopped pistachios for garnish

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Gather the crushed pistachios, sugar, and melted butter in a food processor and pulse until well combined.
  3. Press this mixture into the bottom of a 9-inch springform pan, forming a crust.
  4. Bake the crust in the preheated oven for 10 minutes, then remove and set aside to cool.
  5. Beat the softened cream cheese and sugar in a large bowl until smooth and creamy.
  6. Add the sour cream, lemon juice, lime juice, and vanilla extract, mixing until well combined.
  7. Incorporate the eggs one by one, beating well after each addition.
  8. Pour the cheesecake batter into the cooled pistachio crust, smoothing the top.
  9. Bake for 50-60 minutes until the edges are set but the center slightly jiggles.
  10. Cool the cheesecake inside the oven with the door slightly ajar for 1 hour, then refrigerate for at least 4 hours or overnight.
  11. Combine fresh cherries, lemon juice, lime juice, and honey in a small saucepan and cook over medium heat for 5-7 minutes until thickened.
  12. Allow the cherry mixture to cool to room temperature, then pour over the chilled cheesecake.
  13. Garnish with chopped pistachios and serve chilled.
