Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1 tbsp sugar
  • 1/4 cup pistachios, finely chopped
  • 2 cups cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 tbsp lime juice
  • 1 tsp lemon zest
  • 1 tsp lime zest
  • 2 cups fresh cherries, pitted and halved
  • 1/4 cup sugar (for cherry topping)
  • 1 tbsp lemon juice (for cherry topping)
  • 1/2 tbsp cornstarch

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the graham cracker crumbs, melted butter, sugar, and finely chopped pistachios until well combined.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan and bake for 10 minutes, then set aside.
  4. Beat the cream cheese, sour cream, and sugar in a large mixing bowl until smooth and creamy.
  5. Add the eggs, one at a time, mixing well after each addition.
  6. Stir in the vanilla extract, lemon juice, lime juice, lemon zest, and lime zest until just combined.
  7. Pour the cheesecake batter over the crust and smooth the top. Bake for 55-60 minutes until edges are set but center is slightly jiggly.
  8. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
  9. Refrigerate the cheesecake for at least 4 hours or overnight.
  10. Combine cherries, sugar, and lemon juice in a saucepan over medium heat and cook until cherries release juice, about 5-7 minutes.
  11. Mix cornstarch with 1 tablespoon of cold water to create a slurry, add to the cherry mixture, and stir until it thickens.
  12. Spread cherry topping over the chilled cheesecake before serving.

Notes

For a smoother batter, use room temperature ingredients. Top with whipped cream for extra richness.
