- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1 tbsp sugar
- 1/4 cup pistachios, finely chopped
- 2 cups cream cheese, softened
- 1 cup sour cream
- 3/4 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 tbsp lime juice
- 1 tsp lemon zest
- 1 tsp lime zest
- 2 cups fresh cherries, pitted and halved
- 1/4 cup sugar (for cherry topping)
- 1 tbsp lemon juice (for cherry topping)
- 1/2 tbsp cornstarch
Instructions
- Preheat your oven to 325°F (160°C).
- Mix the graham cracker crumbs, melted butter, sugar, and finely chopped pistachios until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan and bake for 10 minutes, then set aside.
- Beat the cream cheese, sour cream, and sugar in a large mixing bowl until smooth and creamy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla extract, lemon juice, lime juice, lemon zest, and lime zest until just combined.
- Pour the cheesecake batter over the crust and smooth the top. Bake for 55-60 minutes until edges are set but center is slightly jiggly.
- Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 1 hour.
- Refrigerate the cheesecake for at least 4 hours or overnight.
- Combine cherries, sugar, and lemon juice in a saucepan over medium heat and cook until cherries release juice, about 5-7 minutes.
- Mix cornstarch with 1 tablespoon of cold water to create a slurry, add to the cherry mixture, and stir until it thickens.
- Spread cherry topping over the chilled cheesecake before serving.
Notes
For a smoother batter, use room temperature ingredients. Top with whipped cream for extra richness.
