- 4 large russet potatoes, cut into thick fries

Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the russet potatoes if desired, and cut them into thick fries.
- Pat the cut fries dry with a paper towel.
- Toss the fries with olive oil in a large mixing bowl.
- Add Cajun seasoning, garlic powder, paprika, black pepper, and salt to the bowl.
- Mix thoroughly to coat the fries evenly.
- Spread the seasoned fries on a baking sheet in a single layer.
- Bake for 30-35 minutes, flipping halfway through.
- Combine mayonnaise, ketchup, hot sauce, Dijon mustard, lemon juice, smoked paprika, minced garlic, and cayenne pepper in a mixing bowl for the voodoo sauce.
- Whisk until smooth.
- Remove fries from the oven when golden and crispy.
- Garnish with chopped parsley and serve with voodoo sauce.
Notes
For extra crispiness, consider soaking the fries in water for 30 minutes before cooking.
